PURPOSE:To obtain the titled ingredient useful as sliced and dried rice cake, rice-cake cubes, SENBEI (Japanese cracker), bean-jam-filled wafers, etc., having excellent elongation and extension and crispy texture free from cracking, by blending rice cake dough with gelan gum. CONSTITUTION:Riced cake dough is blended with 0.8% gelan gum to give the aimed ingredient.
