PURPOSE:To prepare an extremely delicious fried pumpkin, keeping the original shape, without causing the collapse of the shape, by using a pumpkin as a raw material, steaming and oil-frying the pumpkin, and freezing the product. CONSTITUTION:A pumpkin is seeded, washed with water, cut to a proper size, and steamed or boiled preferably in two divided steps to effect the uniform cooking to the core part of the pumpkin. The steamed pumpkin is fried in edible oil preferably at 160-180 deg.C, left to cool, deoiled preferably by a centrifugal separator, and frozen to obtain the objective fried pumpkin. |
