PURPOSE:A seasoning composition having a seasoning width spreading in the oral cavity, good body, good palatability, and wide utility, containing three components of potassium, a glutamic acid, and a sugaralcohol. CONSTITUTION:A seasoning composition containing potassium, a glutamic acid, and a sugaralcohol in a molar ratio of potassium: glutamic acid of 1-20:1 and in a molar ratio of sugaralcohol: (total of potassium, glutamic acid, and sugaralcohol) of 0.1-0.75:1. One or more of sorbitol, mannitol, maltitol, xylitol, etc. are used as the sugaralcohol, and about >=40wt% potassium chloride as a potassium source calculated as number of moles based on total potassium source is preferably used. |
