A process is disclosed for preparing L-amino acids by contacting a logarithmically growing culture of suitable microorganisms with the corresponding alpha-keto acids with the rate and timing of the alpha-keto acid feeding being correlated to the rate of culture growth e.g. by monitoring changes in the pH of the culture broth brought about by changes in culture growth rate. Both the upper and lower pH levels can be controlled during fermentation to maximize the environmental conditions for the conversion of the precursor to the L-amino acid by the growing culture.
