发明名称 PREPARATION OF NATURAL BROTH
摘要 PURPOSE:To prepare a natural broth free from causing flocs even in a long time, by removing the residua from the boiled natural broth stock, by allowing the liquid to stand with a seasoning, and by filtering the mixture through a fitter paper. CONSTITUTION:A natural broth material, e.g. sea tangle or dried bonito, is boiled to extract the tasting substance from the material with hot water, and the residua and the broth are separated by filter cloth. A seasoning is added to the broth, and the mixture is allowed to stand for a given time, then filtered through a filter paper to give a natural broth. Soy sauce, sugar, or sweet sake is used as the seasoning. The time of standing after the addition of seasoning is up to the floc formation, and about 1hr empirically.
