PROBLEM TO BE SOLVED: To provide a mix for baked confectionery that can manufacture the baked confectionery to which baking color does not attach and that has transparent appearance by calcining dough using a heated mold.SOLUTION: A mix for baked confectionery obtained by being calcined using a heated mold, includes at least 40 mass% of one or more starches selected from the group consisting of glutinous potato starch, processed glutinous potato starch, acetylation potato starch, acetylation acid crosslinking potato starch, hydroxypropyl potato starch, and hydroxypropyl acid crosslinking potato starch, and does not substantially include grain flour. |
