PROBLEM TO BE SOLVED: To provide a method for producing a wheat bran processed article with excellent flavor and texture, in which wheat odor can be effectively reduced, also the amount of fatty acid, e.g., causing unpleasant odor in the wheat bran can be remarkably reduced, and further, both of a roughness feeling and a dryingness feeling felt in the mouth when the wheat bran is eaten can be reduced.SOLUTION: Provided is a method for producing a wheat bran where a wheat bran is treated using a two axial extruder, in which the temperature in the barrel of the two axial extruder is controlled to 60-200°C, and the inside of the barrel is charged with a wheat brain having a lipid content of 5.0 mass% or lower and water of 15-95 pts.mass to 100 pts.mass of the wheat bran, and the charged matter is kneaded in the barrel.SELECTED DRAWING: None |
