The present invention relates to a method for processing slices of mullet flesh and a manufacturing method of fish cutlets using the same. In particular, a natural extract such as one extracted from prickly pear is added to enhance nutrients, to eliminate fishy smell, and to enhance flavor and preferences. The method for processing slices of mullet flesh includes: slicing mullet flesh to obtain slices of mullet flesh; soaking slices of mullet flesh in a soaking solution containing a botanical extract; and performing a post treatment to remove residue of the soaking solution on the surfaces of the slices. |
