A temperature control apparatus and method of an oven range are provided to protect a meat probe by restricting the pyrolysis function and driving a convection fan when the meat probe is connected to the oven. A temperature control apparatus of an oven range comprises a temperature sensing part(200) sensing the inner temperature of the oven range, a controller(300) which determines the connection of a meat probe(100) and the setting of pyrolysis function and controls the activation of pyrolysis function and the operation of a convection fan(700), a heater drive unit(400) operating a heater(500) according to the control signal of the controller, and a fan driving unit(600) controlling the drive of the convection fan according to the control signal of the controller.
