<p><P>PROBLEM TO BE SOLVED: To provide a method for producing dried persimmon processed food enabling obtaining palate feeling of a persimmon without losing its components and flavor even if adding to food such as confectionery, bread, ice and yoghurt, and containing satisfactory fruit sugar. <P>SOLUTION: This method for producing the dried persimmon processed food comprises a dried persimmon processing stage of processing fruits of persimmons into dried persimmons attached with white powdery fruit sugar, a drying stage of air-drying the dried persimmons processed in the dried persimmon processing stage to bring the water content thereof to≤5 wt.%, a mincing stage of mincing the dried persimmons dried after the drying stage, and a fruit sugar attaching stage of processing to attach white powdery fruit sugar to the whole surface of the minced dried persimmons after the mincing stage. <P>COPYRIGHT: (C)2004,JPO&NCIPI</p> |
