<p>An assembly applies heat treatment to liquid or semi-liquid food. The assembly has two identical parallel passages in which heat treatment takes place, each linked to a common valve-controlled intake and a common discharge system, and further to a common sterilization system. The heat treatment passages are especially operated alternately. The heating elements (5-7, 9-13) can be operated in a cross-flow arrangement and/or contra-flow. The heating elements are plate- or pipe heat-exchangers. The valves are multi-path units. Flow through the first (4) and second (23) flow paths can be coupled by the multi-path valves (27). Also claimed is a commensurate operating process in a temperature range of from preferably 60 degrees Centigrade to 250 degrees Centigrade or 90 to 140 degrees Centigrade.</p> |
