PURPOSE: A method for aging kimchi using Acer mono Max. sap is provided. It shortens the aging time. The kimchi has an enhanced taste and flavor. CONSTITUTION: A kimchi material containing chinese cabbage, radish, leaf mustard, vegetables or the like is preserved with salt, mixed with Acer mono Max. sap which is sterilized at 80deg.C or more, and a seasoning stuff containing red pepper powder, garlic, ginger, Welsh onion, radish, carrot, pear or the like and then aged. |
