PROBLEM TO BE SOLVED: To provide a method for producing a coated and fried rice cake that has unconventionally light texture and the rich-tasting coat. SOLUTION: A flour of glutinous rice is steamed, cooled down, cut and formed to prepare glutinous rice cake dough having a certain shape. These formed glutinous rice cake dough pieces are dried to adjust their moisture content, and when necessary, the surfaces of the cake pieces 1 are carved with random lines 2 to prepare pieces of formed glutinous rice cake (or dough). The resultant rice cake pieces are coated with a batter prepared by adding water to a flour premix of wheat flour, starch, corn flour, rice flour, and the like, and fried. The resultant coated and fried glutinous rice cake comprises the swollen body of glutinous rice cake and the coat layer formed on the outside of the rice case body.
