METHOD FOR PREPARING SKIM POWDER COMPOSITION CONTAINING FERMENTED WHEAT FLOUR DILUENT FOR FOOD RAW MATERIALS

PURPOSE: Method for preparing a skim powder composition containing fermented wheat flour diluent is provided, which brings a fermenting effect and a fermented taste without fermenting dough by adding the prepared skim powder composition to raw materials. CONSTITUTION: Method for preparing a skim powder composition containing fermented wheat flour diluent comprises the following steps: (i) A first step to pre-treat wheat flour with starch decomposing enzyme 0.09-0.11wt% and protease 0.009-0.011wt%; (ii) A second step to mix nonfat dry milk solution 50-150wt% and a solution 1-10wt% prepared by inoculating Lactococcus lactis and Lactococcus cremoris in mix nonfat dry milk solution to the prepared wheat flour solution 100wt%; (iii) A third step to inoculate the strain mixed of Lactocbacillus brevis and Lactocbacillus plantarum, and ferment with adding heat; and (iv) A fourth step to add lactose 5-50wt%, and homogenize, and then spray-dry.
