PROBLEM TO BE SOLVED: To readily and inexpensively obtain the subject food giving a preservative agent having excellent safety and hardly generating various molds by adding an extract of Yucca and ethanol to a raw material of processed wheat flour food. SOLUTION: This food is obtained by adding preferably 0.01-3 wt.% of Yucca extract and 0.8-10 times of a weight of the Yucca extract of ethanol to wheat flour as a raw material in producing processed wheat flour food (preferably bread). The ethanol added together with the Yucca extract is gradually evaporated and diminished in a process that the raw material mixture is processed with shaping, backing, drying, etc., and scarcely remained in the product. |
