摘要 PURPOSE: To obtain the subject new compound which is a specific strogin compound available by separation and purification from a plant belonging to the family Acanthaceae and having taste modifying activities and excellent in stability due to a nonprotein and useful as a taste modifier, etc. CONSTITUTION: This new strogin compound of the formula [A is a hexapyranose residue in which OH groups may optionally be etherified or acylated; B is a hexapyranose residue and pentopyranose residue in which OH groups may optionally be etherified or acylated and a uronic acid residue in which the primary alcohol group in the pyranose residue is converted into carboxyl group; (n) is 1-3; R1 to R3 are each H, a 1-4C alkyl or a 2-4C acyl]. The compound has taste modifying activities and is excellent in stability due to a nonprotein and useful as a taste modifier, etc. The compound is obtained by extracting a plant belonging to the family Acanthaceae (e.g. Strobilanthes dyerianus) with a solvent and then purifying the resultant extract by the column chromatography.
