PURPOSE:To quickly expel only waste steam used for steaming to prevent dew from dripping on rice to be steamed for improving taste by a method wherein upper steam chambers are formed by side walls, which are higher than grain beds and provided on both sides of conveyers with steam vent holes, and a cover above the walls, and a steam exhausting devices are furnished on the cover. CONSTITUTION:Conveyers 2 are laid through a primary steaming apparatus 11 and a secondary steaming apparatus 13, and side walls 3 and 4, whose top rims of the inner walls are located higher than the surfaces of rice beds, are furnished along both sides of the conveyers 2. Covers 5 each having a pitched-roof shape with a ridge in the middle are mounted on the bent parts on the upper rims of the side walls 3 and 4 and form two or more upper steam chambers adjacent to each other between the starting point and the terminal point of the conveyers 2. Below the covers 5, partition plates are provided at positions located above the level of the rice which is transferred by the conveyers 2 and below the upper rims of the side walls 3 and 4, and both sides of the partition plates are close to the side walls 3 and 4 to form two or more compartments 6a separated from the upper steam chambers 6. An exhaust duct 35 is installed on an upper cover 33 above the starting side of the conveyer 2 in the primary steaming apparatus 11 and is connected to a free space 34. Exhaust ducts 36 and 37 are installed on the upper cover 33 above both starting and terminal sides of the conveyer 2 in the secondary steaming apparatus 13, and respectively connected to free spaces 34.
