The invention relates to a process and material for the preparation of pasta from a dough, which is produced from flour, a liquid and a binder by combining the ingredients and mixing. It is the object of the present invention to create a very simple method of producing pasta, in which hitherto unutilised waste products from the dairy industry assume the role of the binder. The invention comprises using freshly produced whey containing living cultures both as the liquid and as the binder in the pasta production. |
