PURPOSE:To produce soybean protein having excellent taste and flavor in high yield, by preparing lipoxygenase-deficient soybean by genetic breeding and using the soybean as a raw material. CONSTITUTION:Soybean deficient in two of lipoxygenase isozymes L-1, L-2 and L-3 is prepared by genetic breeding and is defatted by conventional method. The obtained defatted soybean is extracted with an aqueous medium or hydrated alcohol. Whey and/or bean curd refuse, etc., are removed from the extract according to the kind of objective soybean protein and the obtained protein is dried. |
