发明名称 METHOD FOR PRESERVING FOOD BY REFREEZING
摘要 Preservation of frozenfoods comprises; a) forming an ice capsule, in which the food, initially at room temp., is chilled in a freezing medium of - 80 to -100≦̸C to form a capsule within 15min; b) mildly chilling the food at -25 to -35≦̸C so that the temp. in the center of the food is 0≦̸C; c) then quickly chilling at -80 to -100≦̸C so that the temp. in the center becomes -6≦̸C or lower; d) storing the food at -18 to -20≦̸C until consumed. The ice capsule is pref. formed by blowing a freezing gas medium onto food sprayed with an aqueous soln. This method prevents the formation of large ice crystals and does not lead to structural fracture of the prod. over after six months.
