PURPOSE:To obtain a cooked rice food for lunch, etc. having excellent preservability, by cooking raw rice in the presence of an organic acid or its derivative to obtain cooked rice having a specific pH value, and freezing the product after forming and packaging, thereby suppressing the proliferation of microorganisms and preventing the degradation of the cooked rice food. CONSTITUTION:Raw rice is added with an organic acid or its derivative (e.g. glucono delta lactone), cooked to attain a pH value of 3.5-4.7, formed, packaged, and frozen to obtain the objective food. The product is thawed preferably by heating the food at about 60-80 deg.C. |
