[Also in Division A2] The invention provides a substantially diglyceride and triglyceride free composition comprising a 1,2-propylene glycol monoester of a fatty acid containing 12 or more carbon atoms, the monoester being predominantly in the alpha form, and an ionic surface active salt stabilizer having a hydrophilic-lyophilic balance of at least 16 which is dispersible in the monoester and, in the form of its alkali salts, in water and which forms an interfacial complex with the monoester, the concentration of the stabilizer not being so high as to form a crystalline phase in the composition. These compositions, in which the monoester is stabilized in the alpha form, are used as emulsifiers and stabilizers for foodstuffs, the alpha form being preferred for its whip-imparting properties and higher emulsifying power. The preferred monoester is glycol monostearate. The composition may also include monoglycerides derived from fatty acids containing 12 or more carbon atoms. The stabilizers are characterized as including groups which are hydrogen bonding in type or act as acceptors for hydrogen bonds and may be used in amounts of 1-25% by weight of the propylene glycol monoester. Specified classes of stabilizers include (a) alkali metal and alkaline earth metal salts of C 2-6 mono-, di- or tri-carboxylic acids substituted by ester or amide groups derived from C 12-22 fatty acids, e.g. K stearoyl lactate, K stearoyl hydroxy acetic acid; (b) Na salts of an acidic half ester of a glycerol monoester of a fatty acid and a dibasic acid, e.g. Na salt of monostearin succinic acid half ester; (c) salts of acylated amino acids, e.g., Na salt of stearoyl-N-glycine, K salt of palmitoyl-N-alanine; (d) salts of half esters of dibasic acids and fatty alcohols, e.g. mono stearyl fumarate Na salt, Na salt of sulphated lauryl alcohol; (e) cationic stabilizers, e.g. the hydrochloride of stearyl glycinate. Other stabilizers which can be in compositions which are not to be used in foodstuffs include Na salts of sulfosuccinic esters and quaternary ammonium salts. The compositions can be prepared by blending the components, e.g., by melting or by dispersing in aqueous media. The formation of the required interfacial complex can be ascertained from X-ray diffraction and IR analysis and the whipability of the composition. Examples relate to the preparation of glycol monoester compositions and the use thereof in food mixes (see Division A2).
