PROBLEM TO BE SOLVED: To provide a method for coagulating a devil's tongue paste, by which the devil's tongue free from calcium smell can be produced, while effectively using wood chips used for mushroom culture beds. SOLUTION: This method for coagulating the devil's tongue paste, characterized by adding as a coagulating agent the incinerated ash of wood chips used for mushroom culture beds, especially the incinerated ash of coniferous wood chips used for Grifola frondosa culture beds, to the devil's tongue paste to coagulate the devil's tongue paste. The devil's tongue product obtained using the incinerated ash as the coagulating agent scarcely has the smell of calcium. |
