PROBLEM TO BE SOLVED: To provide a method for producing rice cracker, excellent in applicability, completed through conclusion after earnest study, and capable of producing a new kind of rice cracker contrived regardless of the conventional method for producing rice cracker by using water-soluble protein-eliminated rice flour. SOLUTION: This method for producing rice cracker comprises the following steps: producing confectionery dough using rice flour where water-soluble protein is eliminated, and baking the thus produced confectionery dough. |
