PROBLEM TO BE SOLVED: To provide a production and dehydration method of a gelatin-based food product, which allows the gelatin-based food product to be efficiently dehydrated without spoiling the texture as a food.SOLUTION: The production method of a gelatin-based food product includes the steps of: feeding a gelatin-based food product into a fluid bed including fluidized functional particles floated with air; and dehydrating the gelatin-based food product by removing the water content of the gelatin-based food product through the fluidized functional particles.
