FIELD: food industry. ^ SUBSTANCE: invention relates to the manufacturing technique of flour confectionery products. Method includes preparation of recipe components. Thyme is extracted by liquid nitrogen with corresponding miscella separation. Chicory is cut, dried in microwave field at specified parametres of the process, additionally dried by convective method, impregnated with separated miscella with simultaneous increase of pressure. Then follows pressure reduction down to atmospheric value with simultaneous freezing of chicory and its cryo-grinding in medium of released nitrogen to produce flour. Then one undertakes production of dough from prime wheat flour, flour produced from chicory using described technology, sugar powder, yolks, salt, soda, butter and water. The dough is moulded in the form of sheets and baked. ^ EFFECT: produced sugar waffles have improved consistency, coffee taste and flavour with no coffee added to the formula. |
