The invention relates to a flour made of dried mulberry fruit used in the food industry. The flour made of mulberry fruit has a brownish up to dark brown colour with specific smell and taste, with about 46% sugar content, about 10% protein content and about 6% fats, and it is obtained by grinding the previously washed, pretreated and dried fresh mulberry fruit, in a disc or hammer mill and sieving by means of silken sieves with phi = 194 mium and phi = 120 mium. |
