摘要 The invention relates to a process for producing granulated dry products, which are rehydratable in hot water, for dumplings from starting materials based on a mixture of ungelatinised and gelatinised starch, with or without curd cheese and curd cheese powder, and auxiliary materials conventional for dumplings, by introducing water-permeable bags or other containers filled with the dry products into hot or boiling water, the mixture of the starting materials being kneaded to form a dough having a water content of 30 to 50% by weight and the resulting crumbly dough being formed with or without sieving into granules of an RRS grain size distribution having the residue summation curve <IMAGE> where d = grain diameter d' = grain size for R = 36.79% and n = uniformity coefficient = at least 1.8 and a mixture having d' = 1.7 mm as the upper grain size limit and a mixture having d' = 0.55 mm and the granules of this grain size distribution being directly supplied to a drier and dried to a water content of at most 8% and packaged conventionally.
