SOLUTION: This bread crumb composition for fries comprises 100 pts.wt. of bread crumbs, 0.1-10 pts.wt. of one or more kinds of additives selected from alkaline earth metal hydroxides, alkaline earth metal oxides, calcined egg shell powder, roasted shell powder, and bone dust roasted powder, and 1-100 pts.wt. of protein.
