The invention relates to an integrated process for nutraceutical release of natural compounds remained in walnut kernel after delipidation. The process, as claimed by the invention, consists in that the rigid walnut grist is ground to 40 mesh, is conditioned by washing with deionized water and macerated in edible acetic acid 9%, in a ratio of 1:10, for 6...8 h, resulting in a hydroacetic fluid phase which integrates antioxidant and an insoluble residue to be adjusted to neutral pH, dried up to a humidity of 10% and micronized to dimensions of 15...25 μm, to result in a proteinaceous concentrate containing at least 40% protein which is treated with a solution of NaOH 0.1 M, the precipitate being then separated and dried, to finally result in a proteinaceous isolate containing 22...27% proteins from grist. |
