<P>PROBLEM TO BE SOLVED: To provide a composition for boiled cooking, free from the need of skimming or removing by a separation method whenever scum occurs, and to provide a roux product requiring no scum removing work during boiled ingredients, and easy to cook when cooking curry sauce. <P>SOLUTION: The composition for boiled cooking includes proteolytic enzyme, and an emulsifier of HLB11-16. The packaged roux obtained by separately adding the composition for boiled cooking to packaged roux is for not forgetting the addition of the composition for boiled cooking when making sauce using the packaged roux. <P>COPYRIGHT: (C)2013,JPO&INPIT |
