摘要 <P>PROBLEM TO BE SOLVED: To provide a composition for boiled cooking, free from the need of skimming or removing by a separation method whenever scum occurs, and to provide a roux product requiring no scum removing work during boiled ingredients, and easy to cook when cooking curry sauce. <P>SOLUTION: The composition for boiled cooking includes proteolytic enzyme, and an emulsifier of HLB11-16.
