<p>The present invention relates to a method for producing a mixture containing fatty acid monoglyceride from glycerin and a compound having at least one acyl group, selected from fatty acids and fatty acid glycerides, including: (i) a step of obtaining a mixture containing fatty acid monoglyceride by heating and reacting glycerin and a compound having at least one acyl group, selected from fatty acids and fatty acid glycerides in the presence of a catalyst; (ii) a step including adding glycerin, which is liquid and has a lower temperature than the temperature of the mixture, to the mixture to cool the mixture; and (iii) a step of separating the mixture containing fatty acid monoglyceride from glycerin, obtained in the step (ii), by separating layers.</p> |
