Improvement to fan-assisted ovens for cooking patisserie and bakery products, the said ovens comprising a cooking chamber which encloses heated elements fan-assisted by a turbine producing a circulation of hot air ensuring the cooking of the said products. Inside the cooking chamber 7 at least one enclosure 8 is removably arranged in which the products to be cooked are arranged, the said enclosure 7 being closed on at least four faces 8a, 8b, 8c, 8d.
