The invention relates to a method and a device for separating the anus and at least a part of the rectum from a carcass, comprising of: aligning a core of a separating device with the anus of the slaughtered animal; introducing the core of the separating device at least partially into the anus; separating the anus and at least a part of the rectum from the carcass using the cylindrical knife; characterized in that the knife rotates alternately to the left and to the right during the separation.
