A method of manufacturing an emulsified concentrated food by saccharifying rice with saccharifying enzyme and emulsifying the saccharified rice with rice bran oil and an emulsifier is provided to give a rice drink containing original nutrients of rice. Any one of regular rice, brown rice and a mixture thereof is ground to 100 to 100meshes, agitated with 1 to 100 times its weight of water, heated at 100deg.C, liquefied with 0.01 to 0.5% by weight of liquefying enzyme for 1 to 10hr and saccharified with 0.01 to 0.5% by weight of saccharifying enzyme, 0.01 to 0.5% by weight of protease and 0.01 to 0.5% by weight of cellulose decomposing enzyme for 1 to 10hr to give a rice concentrate. Then 75 to 80% by weight of the rice concentrate is mixed with 2 to 4% by weight of an emulsifier, 2 to 4% by weight of a pH stabilizer, 3 to 6% by weight of polysaccharide, 13 to 15% by weight of rice bran oil, emulsified at 40 to 80deg.C and 1,000 to 4,000rpm for more than 10min and finely ground at 100 to 250bar. Prior to grinding, the rice mixture is roasted. |
