摘要 The invention relates to heating and cooling food products during the production thereof, in particular drying and preserving vegetables and fruits and producing tomato pasts, and can be used for processing lines of the food and processing industries. The inventive method for heat treating food products consists in heating water in a circulation circuit at different temperatures and in cooling. Water is heated in three circulating circuits. Heat energy is produced when a product is cooled in a refrigeration plant which pumps said heat energy from one circulating circuit into another. 25-35 % of heat energy is used for heating water in said circulating circuits at a heat content therein of 120-295 kJ/kg, a water temperature of 25-80°C and a ratio between the water temperatures in each circuit at the input thereof equal to 1(2-2.5):(3-3.5).
