PROBLEM TO BE SOLVED: To provide a method for efficiently producing 6-caffeoyl sophorose, and to provide a method for efficiently purifying the same. SOLUTION: This 6-caffeoyl sophorose is efficiently obtained by heating and hydrolyzing a pigment of Murasakikansho (purple-colored sweet potato) under an acidic condition of a pH 2 to 5. The method for purifying the 6-caffeoyl sophorose comprises making the pigment of the Murasakikansho adsorbed by an adsorbent, then eluting and removing chlorogenic acid by pouring an eluting solution into the adsorbent, and wholly eluting and recovering the remaining pigment. Further, the eluted and recovered pigment is heated and hydrolyzed under the acidic condition, so that the 6-caffeoyl sophorose is formed. Furthermore, the formed 6-caffeoyl sophorose is again made to be adsorbed by the adsorbent, so that the 6-caffeoyl sophorose is eluted and recovered with a high purity, by pouring the eluting solution into the adsorbent.
