FIELD: food processing industry, in particular manufacturing of functional foodstuffs with directional action. ^ SUBSTANCE: complex vegetable emulsifier is based on aqueous extract of soapwort root (Supponaria Officinalis L) and contains 7-8 mass % of dry matter. Additionally it contains 8-10 mass % of laminal comprising 3-4 mass % of dry matter. Emulsifier of present invention has high antibacterial action and is useful in production of emulsions with improved strength and stability. ^ EFFECT: increase assortment of vegetable-origin emulsifiers, emulsifier with high antibacterial effect at minimum quantity; finished product with longer shelf life. ^ 1 dwg, 1 tbl |
