A SYNTHETIC METHOD OF A-KETOL UNSATURATED FATTY ACIDS

A method of efficiently synthesizing an .alpha.-ketol unsaturated fatty acid having a double bond at the .beta.-position of the ketone moiety. The method is characterized by reacting a mono-substituted acetylene (2) with an epoxy compound (3) to synthesize a compound (4) and synthesizing an .alpha.-ketol unsaturated fatty acid (1) from the compound (4), as shown in the reaction formula (1). Reaction formula (1) (2) (3) (4) (1) (R1 is C1-18 alkyl or a C2 - 18 aliphatic hydrocarbon group having one to five double or triple bonds; R2 is a hydroxyl-protecting group; R3 is a carboxyl-protecting group; R is the same as R1, provided that when R1 contains one or more triple bonds, then R is an aliphatic hydrocarbon group in which the triple bonds have been converted to double bonds; and A is C1-18 alkylene.)
