PROBLEM TO BE SOLVED: To obtain a retort food product containing rice cake in which the rice cake does not solve or solidify even when it is subjected to the high- temperature and high-pressure retort treatment or stored for a long period of time by enclosing rice cake prepared by adding a polysaccharide thickener to a mixture of glutinous rice powder, starch, a pH adjuster and saccharides and a bean jam in a retort pouch and retorting. SOLUTION: Rice cake is prepared by admixing a polysaccharide thickener such as alginic acid or its salt to a mixture containing a powder of glutinous rice, starch, a pH adjuster and saccharides. This rice cake and adzuki-bean soup or thick bean meal, soup with sugar having a saccarinity of 10-50 deg.Bx are sealed in a retort pouch and retorting to convert the starch of the rice cake to the β-form. |
