PURPOSE: To provide a method for producing a tubular food, capable of continuously producing tubular konjak, etc., and further to provide a mold for producing the tubular food, used in the production method. CONSTITUTION: The mold 1 for producing the tubular konjak is provided with a guide 9 having raw material extrusion holes 33 for extruding the raw material of the konjak and with guide pins 7 having water flowing out holes 29 for hot water. The guide pins 7 are coaxially disposed in the raw material-extrusion holes 33, respectively, and circular openings are formed with the outer surfaces of the guide pins 7 and the raw material-extrusion holes 33. The gel-like konjak raw material press-charged from a raw material-charging port is extruded from the eight raw material extrusion ports 33, and the hot water charged from a water-charging port flows out from the eight water flowing out holes 29. The hot water is made to flow in the follow parts of the extruded konjak raw material from the water flowing out holes. The hollow parts of the tubular konjak raw material can thereby be coagulated without causing press crush, and the tubular konjak products are continuously extruded. |
