PURPOSE:To obtain a protein food material of good taste, by kneading a protein material such as soybean, which is deficient in any of lipoxygenase isozyme L-1, L-2, or L-3 together with other protein materials in an aqueous system and treating the mixture with heat. CONSTITUTION:Soybean deficient in any of lipoxygenase isozyme L-1, L-2 and/or L-3, such as whole soybeans, powdered soybean milk, concentrated protein, the waste after soybean milk has been squeezed, or a food material containing soybean protein made therefrom is combined with another protein material of a cereal such as wheat, a protein from cereal, or plant leaves. Then, the mixture is kneaded and heat-treated in an aqueous system, for example, extrusion-cooked in a twin-screw extruder.
