摘要 A process for making margarine or other butter substitutes or spreads containing at least about 70% fat by weight is described wherein a semi-stable oil-in-water emulsion containing about 30-60% fat by weight is subjected to mechanical churning to cause the emulsion to undergo phase inversion to form a water-in-oil emulsion containing at least about 70% fat by weight.
