摘要 The present invention relates to a method for producing sugarless peach wine and ice wine using freeze concentration. More specifically, the present invention comprises: a freezing step for harvesting Mibaekdo peach and conducting afterripening, and then freezing in a freezer at -20°C; a thawing step for thawing the Mibaekdo peach frozen after the freezing step in a dark place at room temperatures; a freeze concentration step for extracting juice from the thawed Mibaekdo peach using a juice extractor and then repeating freezing and concentration until the sugar content becomes 35-37 brix; and a fermentation step for adding 15-20 g of yeast and 100 l of the extracted juice to the Mibaekdo peach undergone repeated freezing and concentration and then fermenting at low temperature, and the finished sugarless peach wine and ice wine products are obtained by filtering the fermented Mibaekdo peach using a filter. According to the present invention, the sugarless peach wine and ice wine can be produced using peach with a low sugar content without adding extra additives such as sugar, thereby being economically effective. Additionally, the sugarless peach wine and ice wine can be obtained by repeated freezing and concentration, thereby offering a wide choice of selections and bringing out a unique flavor of peach.
