<P>PROBLEM TO BE SOLVED: To provide a pudding of a novel palate texture, and a production method thereof. <P>SOLUTION: The pudding having the overrun of 50-200% and the breaking strength of 0.2-4.0 N has a fluffy (light) texture, which is produced by mixing an emulsified product comprising oil-and-fat and an emulsifier with a pudding formulation liquid and agitating the mixture, and whipping the obtained mixture below the oil-and-fat melting point. <P>COPYRIGHT: (C)2013,JPO&INPIT |
