The espresso machine or coffee machine has a brewer (2) and a brewing device having a brewing chamber (3) filled with coffee powder (K). A homogenizing unit (1) is so arranged that with it coffee powder provided in the brewing chamber flows through the brewing chamber by flowing brewing liquid, particularly heated brewing water, and thickness of the powder is homogenized by retaining, mixing or diluting during or after flowing the coffee powder and before, during or after leaving the brewing chamber. An independent claim is also included for a method for brewing coffee in an espresso machine or in a coffee machine.
