<p>A moulded PVC container with recessed channels in the base is used to support soft cheese and contain exuded fluids from wet cheeses, esp. "St. Florentin" cheese. The cheese and container are sealed into a plastic bag evacuated to 0.2 bar to inhibit oxidation and assist exudation.</p> |
