发明名称 REPROCESSING METHOD OF FERMENTED AND AGED KIMCHI
摘要 PURPOSE: A method for reprocessing fermented and aged kimchi is provided to promote the productivity of the kimchi by clearing the outer appearance. CONSTITUTION: The method is characterized by the following steps of: (i) removing a fermented solution from fermented kimchi; (ii) removing the additional materials by washing the kimchi with tap water having 0.9% of salinity and with an aqueous solution of 1% sodium lactate respectively; (iii) dehydrating the cleared kimchi and applying sugar and flavor to the kimchi by using grape sugar. The removed additional materials are filtrated to be used as nutritious livestock feed.
