The process consists in adding a liquid base until an aqueous solution of saponified fats which exhibits an alkaline pH is obtained. The fatty waste is thus converted into a homogeneous fluid product and becomes aerobically or unaerobically biodegradable in this form. In this form it can also be reclaimed as a denitrifying agent for aqueous effluents. The device (3) according to the invention can be arranged at the head of the plant. It comprises a settler (4) for separating the fatty waste from its acidic liquor (8), a saponification reactor (5), a mixing device (11), an entry for liquid base (12) and a discharge (13) for the saponified fatty waste towards a tank (1) for biological treatment.
