发明名称 PROCESSING OF FISH SKIN AS FOOD
摘要 PURPOSE:To enable the mass-production of a jellyfish-like food, by cooling scalded fish skin in cold water, decoloring the cooled skin in a 0.5-0.6% aqueous solution of calcium hypochlorite under stirring and deodorizing by washing with water and immersing in water. CONSTITUTION:Fish skin peeled off from fish meat is scaled, washed with water and immersed in hot water of about >=90 deg.C until the skin is shrunk and the back of the skin becomes almost transparent, when the skin is taken out of the hot water. The scalded skin is cooled in an ice-containing chilled water and thrown into a 0.5-0.6% aqueous solution of calcium hypochlorite to effect the decoloration of the skin under stirring. The decolored skin is deodorized by washing with water and immersing in water. The treated skin is dehydrated and subjected to preliminary seasoning and main seasoning to obtain processed fish skin. A processed food having soft and excellent taste and flavor similar to jellyfish can be produced from fish skin by this process.
